Nylon Khaman

Ingredients

  • 1kg – Gram flour (besan)
  • 200g – Sugar
  • 55g – Salt
  • 1,500kg – Water
  • 5g – Turmeric powder/ Yellow color
  • 30g – Citric acid crystals
  • 30g – Baking Soda

      Seasoning

  • 200g – Oil
  • 20g – Mustard seed
  • 30g – sesame seeds
  • 60g – Chilly
  • 20g – Ginger
  • 1ltr – Water
  • 100g – Sugar
  • 16g – salt
  • 2 Twig curry leaves

Procedure

  1. Measure and keep all the ingredients ready for the Nylon Khaman.
  2. In a big bowl add water(1500g), citric acid crystals, salt, sugar and turmeric, and mix well.
  3. Add besan and make it into a smooth batter with medium-thick consistency.
  4. First grease plate with oil.
  5. Add water in the soda bowl.
  6. Then add soda & mix well. If it is not mixed then in khaman red dots will happen.
  7. Pour the mixture into it & level it.
  8. Steam it about 25 minutes.
  9. Heat oil in a pan or Kadai.
  10. Then add mustard seeds to the hot oil. when they splutter, add the sesame seeds.
  11. Then add chilly, ginger & curry leaves saute for 1 min.
  12. Then add water, sugar & salt.
  13. Take out khaman & after it cools then cut khaman into medium pieces.
  14. Pour the tadka over the prepared khaman.
  15. Serve hot.
