Vangi Rice

Ingredients

       Vangi rice powder
  • 5g – Dry red chilly
  • 30g – Urad dal
  • 15g – Chana dal
  • 5g – Fenugreek (methi)
  • 2 pic Cloves
  • 2 pic Cinnamon
  • 15g – Dhania+Jeera powder
  • 10g – Oil
        FOR TEMPERING Vangi rice
  • 10g – Cumin seed (jeera)
  • 15g – Urad dal
  • 2 pic Cloves
  • 10g – Chilly
  • 15 Curry leaves
  • 5g – Ginger
  • 4 pic Cardamom (elaichi)
  • 125g – Brinjal (bengan)
  • 25g – Cashew nuts (kaju)
  • 50g – Frozen peas
  • 8g – Salt
  • Turmeric powder
        Vangi rice
  • 150g – Rice
  • 300g – Water
  • 25g – Vangi rice powder
  • Half lemon

     Note : –

  1. Keep brinjal in salty water, this does not discolor them and gets rid of the bitterness if any.

Procedure

  1. Measure and keep all the ingredients ready for the Vangi Rice.
  2. Soak the rice for 40 min.
  3. Heat oil in pan & add all ingredients for vangi rice powder. Saute till they are aromatic.
  4. Heat ghee in a large thick bottomed pan or kadai. Splutter the cumin seeds.
  5. Then add urad dal. Saute till golden colour.
  6. Then add cloves & cardamom. Saute for 1 min.
  7. Then add kaju. Saute till light golden.
  8. Then add chilly, curry leaves, ginger. Saute for one min.
  9. Then drain brinjal.
  10. Then add drained brinjal & salt. Stir & cover it.
  11. At side add vangi rice masala ingredients in grinder.
  12. Grind it.
  13. Then add vangi rice masala & lemon. Mix well.
  14. Then add water. 
  15. Then add turmeric powder.
  16. After water boils at low flame. Add soaked rice.
  17. Cover with a lid or plate and cook the rice on a low flame till the rice are tender and cooked & it should be easily breakable.
  18. Add frozen peas.
  19. Serve hot.
