Ingredients

  • 400g – Oil for fry vegetable
  • 1kg – Tomato choped
  • 500g – Carrot choped (big size)
  • 400g – Potato choped
  • 460g – Capsicum choped
  • 120g – Beans
  • 1100g – Water
  • 500g – Coconut grinded
  • 500g – Water for coconut grinding
  • 15g – Garam masala
  • 70g – Salt
  • 50g – Sugar
  • 20g – Sambhar masala
  • 20g – Dhania powder
  • 150g – Oil
  • 10g – sambhar masala
Veg Kolhapuri Masala
  • 200g – Ground roasted
  • 15g – Dry red chilly roasted
  • 30g – Seasame seed (tal) roasted
  • 10g – Poppy seed (khaskhas) roasted
  • 5g – Cinamon (taj) roasted
  • 5g – Star anise (badiya) roasted

Procedure

  1. Measure and keep all the ingredients ready for the Veg kolhapuri.
  2. Mix all veg kolhapuri masala & grind it.
  3. Keep oil on gas.
  4. Fry potato till golden & crisp.
  5. Add carrot fry till it soft.
  6. Add capsicum & beans fry 2-3 min.
  7. Add salt.
  8. Add all masala.
  9. Mix well saute for 1 min.
  10. Add tomato saute till it become soft.
  11. Add coconut gravy. 
  12. At side in hot oil add sambhar masala & mix.
  13. Add oil in sabji for red colour oil.
  14. Serve hot.
